Being able to distill the essence of white grapes that nature has transformed into noble berries after the appearance of Botrytis cinerea on the skin of the grapes is an extraordinary event that does not occur every year.
Observation, patience and oenological knowledge are fundamental factors in the process.

Esencia is made from 100% botrytized, wrinkled and tiny berries, in which only a few drops of juice remain with a very high concentration of sweetness and acidity. After a long and slow fermentation in barrels, we obtain a very sweet and slightly acidic wine – very balanced – that remains between barrel and bottle for a minimum of 5 years to follow a path of evolution that can last several decades.
