200 Odd Monks Wine

As its name suggests, “Impar” refers to a unique and singular event. This wine is the result of a spontaneous phenomenon. During the production of our “200 Monges Vendimia de Invierno” the winemakers encountered an atypical situation when a new spontaneous fermentation occurred in several of the barrels as a result of the action of indigenous yeasts that were suspended in the environment of the winery itself. These yeasts have been able to split high concentrations of sugars at very low temperatures.

As its name suggests, this is a unique batch of 2,400 units and is difficult to reissue, so its availability is scarce and limited.
